Sharpham Rustic and chive muffins with ham and tomato relish

Serve straight out of the oven for the full Sharpham Rustic flavour

Ingredients

  • 375g self-raising flour
  • 140g tomato relish, plus extra to serve
  • 300g ham, shredded
  • 150g kale
  • 180g Sharpham Rustic with Chives & Garlic, crumbled
  • 125ml olive oil
  • 250ml milk
  • 2 eggs
  • Salt and pepper

Method

To prepare the kale

  1. Boil the kale for two minutes until wilted.
  2. Drain, then set aside to cool.
  3. Dry in a salad spinner and remove any remaining water by blotting with kitchen paper.
  4. Remove the ribs, then shred.

To make the muffins

  1. Preheat the oven to 180°C.
  2. Place the flour, relish, ham, shredded kale, cheese, oil, milk and eggs in a large bowl and mix until just combined.
  3. Divide the mixture between 12 muffin cases and bake for 25 minutes, or until cooked when tested with a skewer.
  4. Serve warm (or cold) with a dollop of tomato relish!
