A handful of fresh garden herbs (thyme, oregano, chives, parsley)
A handful of mini capers
Salt and pepper
Good quality olive oil
Put the sliced red onions into a small bowl with the sugar and vinegar. Stir together and leave to marinate for ten minutes.
Arrange the remaining ingredients on a large platter, drizzle over the olive oil, and season with salt and pepper.
Scatter the capers over the tomatoes.
