Heritage tomato salad

A tasty summer salad, perfect for any gathering

  • 700g heritage tomatoes, or a selection
  • 1 bunch of spring onions, finely sliced
  • Half a red onion, finely sliced
  • 2 tbsp red wine vinegar
  • 1 tbsp caster sugar
  • A handful of fresh garden herbs (thyme, oregano, chives, parsley)
  • A handful of mini capers
  • Salt and pepper
  • Good quality olive oil


  1. Put the sliced red onions into a small bowl with the sugar and vinegar. Stir together and leave to marinate for ten minutes.
  2. Arrange the remaining ingredients on a large platter, drizzle over the olive oil, and season with salt and pepper.
  3. Scatter the capers over the tomatoes.
