The Sweet One

Cocktail recipe by Harry Howell, Cary Arms & Spa, Torquay, Devon

Ingredients

1 egg white
Ice
25ml Mainline Spirit Co Western Star Gin
25ml lime purée/juice
35ml sugar syrup
1 bar spoon of Waterhouse Fayre Raspberry Jam

Method

Place the egg white into a Boston tin with ice and shake briefly.
Add the gin, lime purée, sugar syrup and raspberry jam, and shake well.
Single strain over ice into a glass of your choice.
Top with tonic water to taste.
