A simply irresistible dessert to share with friends
200g good quality dark chocolate, broken into pieces
6 eggs, yolks and whites separated
40g caster sugar
Selection of summer fruits such as raspberries, strawberries, blueberries and plums
Place the chocolate in a small saucepan over a low heat. Stir until melted and smooth. Carefully stir through the egg yolks and set aside.
Whisk the egg whites until soft peaks form. Gradually add the sugar and whisk until stiff.
Fold a large dollop of the egg whites through the chocolate mix, as quickly and gently as possible. If the chocolate solidifies, stir in a couple of spoonfuls of boiling water. Add another spoonful of the whipped egg white and stir through.
Repeat with remainder of the egg whites, gently folding through until all the mixture is combined.
Spoon into serving glasses and chill in the fridge for a couple of hours until set.
