Broad bean, coriander & almond pesto

Broad bean, coriander & almond Salsa


  • 250g broad beans, podded and blanched
  • 1/2 bunch of coriander leaves, stripped with stalks removed
  • 100g whole blanched almonds
  • 60ml olive oil
  • 2 tbsp apple cider vinegar
  • Zest of 1/2 lemon
  • Salt and pepper to taste


  1. Place all ingredients into a blender. Mix until finely chopped and well combined.
  2. Check the seasoning and adjust with more salt and pepper, if needed.
