Get in the mood for Rio with these healthy bbq chicken skewers
Ingredients
4 large chicken breasts
4 limes
2 tbsp smoky chipotle sauce
1 tbsp olive oil
1 tsp sugar
Salt and pepper
36 cherry tomatoes
Method
Cut the chicken into bite-sized pieces and place into a large bowl. Add the chipotle sauce, olive oil, sugar, salt and pepper and juice of 1 lime. Marinate for at least 1 hour.
Cut the remaining limes into quarters. Once the chicken has marinated, thread pieces of chicken onto a skewer with a couple of lime wedges and a few cherry tomatoes.
Cook the skewers on a hot barbecue, griddle pan or under an oven grill until the chicken is cooked through. Serve with rice or barbecue salads.
