Gin cocktail with raspberry jam

The Sweet One

Cocktail recipe by Harry Howell, Cary Arms & Spa, Torquay, Devon

Ingredients

  • 1 egg white
  • Ice
  • 25ml Mainline Spirit Co Western Star Gin
  • 25ml lime purée/juice
  • 35ml sugar syrup
  • 1 bar spoon of Waterhouse Fayre Raspberry Jam

Method

  1. Place the egg white into a Boston tin with ice and shake briefly.
  2. Add the gin, lime purée, sugar syrup and raspberry jam, and shake well.
  3. Single strain over ice into a glass of your choice.
  4. Top with tonic water to taste.
