Brazilian-inspired chicken skewers

Get in the mood for Rio with these healthy bbq chicken skewers

Ingredients

  • 4 large chicken breasts
  • 4 limes
  • 2 tbsp smoky chipotle sauce
  • 1 tbsp olive oil
  • 1 tsp sugar
  • Salt and pepper
  • 36 cherry tomatoes

Method

  1. Cut the chicken into bite-sized pieces and place into a large bowl. Add the chipotle sauce, olive oil, sugar, salt and pepper and juice of 1 lime. Marinate for at least 1 hour.
  2. Cut the remaining limes into quarters. Once the chicken has marinated, thread pieces of chicken onto a skewer with a couple of lime wedges and a few cherry tomatoes.
  3. Cook the skewers on a hot barbecue, griddle pan or under an oven grill until the chicken is cooked through. Serve with rice or barbecue salads.
