Taste Buds talks to the Head Chef at Boringdon Hall in Plymouth

How long have you been running your restaurant?
I’ve been at Boringdon since May 2016, and have been awarded three AA Rosettes. 

What is your inspiration?
I have so many inspirations: past colleagues, the current team, and the future talents within my team. 

Sum up your cooking style.
Season-led, produce-driven. 

Must-try dish on your menu?
Our venison with Boringdon berries and Muscat. 

Local produce to eat now?
I recommend Mallard ducks, chard, parsnips, peas, and apples at this time of the year. 

Savoury or sweet?
Both – it’s all about balance. 

Local chef you'd love to meet?
I think I’ve been lucky enough to meet them all, or at least most of them. 

Top tip for budding chefs?
Focus, head down, listen and push on. 

Favourite kitchen gadget?
Probably our Pacojet – it makes the smoothest ice creams and sorbets.

Are there any special events/menus taking place over the festive period?
Our Secret Supper with Polgoon brings together the finest in local, seasonal produce and artisan wines to create an unforgettable evening. It takes place on Friday 10 November from 7pm, and costs £79.50 per person, including wine pairing. Throughout the festive season, decadent festive lunches, private dining, Boxing Day and Christmas Eve lunches are all on the menu, offering the finest yuletide fare.
